Tchaktchouka (Poached eggs with tomatoes and onions)

Ingredients
  • Onions - 2 lbs
  • Tomatoes - 1 lbs
  • Garlic - 3 cloves
  • Eggs - 4
  • Black pepper - 1/2 tsp
  • Olive oil - 1 tsp
  • Salt
Directions 
  1. Peel the onions and cut in small slices. Chop the tomatoes and the garlic.
  2. In a large pan, mix the oil, onions and salt. Cook on low heat for about 20 minutes.
  3. Add the tomatoes, garlic, black pepper and increase the heat to medium.
  4. Mix and cook for another 20 minutes.
  5. Crack the eggs and cook for 5 minutes.
