Ras El Hanout

Ras El Hanout is a complex spice blend used in Algeria and most other regions in the Maghreb. The special blend can include up to 30 ingredients with the most common ones include cardamom, nutmeg, anise, mace, cinnamon, ginger, peppers, and turmeric. These spices are ground together to produce a very flavorful blend. Some chefs protect their exact formulas like a closely guarded family secret.

The following recipe is a simplified version commonly found in markets and sometimes in fine stores in the US.

Ingredients
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cardamon
  • 2 teaspoons ground mace
  • 1 teaspoon cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground coriander seeds
  • 1 teaspoon ground nutmeg
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground anise seeds
  • 1/4 teaspoon ground cloves

Directions:
  1. Blend all spices together.

Can be stored in a jar for several months.
