Tchaktchouka (Poached eggs with tomatoes and onions)

Ingredients
- Onions - 2 lbs
- Tomatoes - 1 lbs
- Garlic - 3 cloves
- Eggs - 4
- Black pepper - 1/2 tsp
- Olive oil - 1 tsp
- Salt
Directions
- Peel the onions and cut in small slices. Chop the tomatoes and the garlic.
- In a large pan, mix the oil, onions and salt. Cook on low heat for about 20 minutes.
- Add the tomatoes, garlic, black pepper and increase the heat to medium.
- Mix and cook for another 20 minutes.
- Crack the eggs and cook for 5 minutes.
