Spinach Boureks

Ingredients
- 12 philo sheets
- Spinach - 2 lbs (frozen)
- Oil - 2 tbs
- butter
- Egg - 1
- Cheddar cheese
- Bechamel sauce
- Oil for frying
Directions
- Boil the spinach and drain very well.
- In a large pan, mix 2 Tbs oil with the salt and butter. Add the spinach.
- Cook on medium heat until all the water evaporates.
- Prepare a bechamel sauce. Add the egg and the cheese. Mix and add the spinach slowly.
- Prepare a sheet of philo, fill it with a table spoon of the mixture. Roll it like a spring roll.
- Prepare all the boureks and then fry them in a pan with oil until golden.
- Serve warm with lemon wedges.
